INGREDIENTS

  • 180g frozen broad beans
  • 60g low fat feta cheese
  • 1 garlic clove, crushed
  • 1 tablespoon fresh lemon juice + 1 tablespoon water
  • 4 teaspoons olive oil
  • 2 tablespoons chopped fresh mint
  • Seasoning

INSTRUCTIONS

  • Cook the broad beans in a saucepan of boiling water for 2-3 minutes or until just tender. Refresh under cold running water. Drain.
  • Process all the ingredients until smooth and season to taste.
