 INGREDIENTS

  • 10 teaspoons Sugar
  • 50 ml Sunflower Oil
  • 2 Eggs
  • 2 teaspoons Vanilla Essence
  • 150 ml Skimmed Milk
  • 130 g Whole-Wheat Flour
  • 2 teaspoons Baking Powder
  • 30 g Apple Finely Grated
  • 30 g Carrot Finely Grated
  • 1 teaspoons Ground Cinnamon

INSTRUCTIONS

  • Preheat the oven to 180°C and prepare a loaf tin by spraying with baking spray or grease with margarine and then cover with flour.
  • Mix the sugar and oil in a mixing bowl.
  • Add the eggs one at a time mixing each time you add one.
  • Add the milk, vanilla essence, salt and mix.
  • Mix the flour and baking powder in a separate bowl and add to the mixture, make sure all the ingredients are combined well.
  • Add the cinnamon, grated carrot and apple to the cake mix and mix well.
  • Pour the mixture into the tin.
  • Place in the middle of the oven on the middle shelf for 30-35 minutes.
  • Leave the cake to cool, then turn it out and cut into 10 slices.
