A healthy version that tastes delicious! Portions per serving on the Good Habits Plan 1.5 carbohydrates 3 x vegtables

INGREDIENTS

  • 1 small red onion finely chopped
  • 1 celery stick finely sliced
  • 1 small red pepper finely diced
  • 250g chestnut mushrooms sliced
  • 1 courgette diced
  • 120g brown basmati rice
  • 1 garlic clove crushed
  • 600ml vegetable stock
  • 400g can chopped tomatoes
  • pinch saffron strands
  • 1 tsp fresh thyme chopped
  • 90g frozen peas
  • 45g frozen baby broad beans
  • 45g frozen sweetcorn

INSTRUCTIONS

  • Heat a non-stick wok and dry fry the onion, celery, pepper, mushrooms, courgette and garlic over a high heat for 4 to 5 minutes, stirring occasionally
  • Add the rice, stock, tomatoes, saffron and thyme. Stir and simmer for 20 minutes. Season to taste.
  • Stir in peas, beans and sweetcorn. Heat through before serving.
