- 135g mixed greens
- 1 tablespoon fresh thyme leaves
- 120g pomegranate seeds & grapes, halved
- 1/2 teaspoon olive oil
- 1 teaspoon pomegranate syrup
- 1 large lemon juice juiced
- 1 clove garlic minced
- 75g lowfat Halloumi cheese cubed
- Heat a griddle pan and dry fry the cubed halloumi for a couple of minutes.
- Mix all the dressing ingredients together.
- Toss all the ingredients with the dressing and top with the hot Halloumi cheese.
