HOLLY’S LITE HALLOUMI SALAD

Holly is a Goal member who has lost 21 lbs ! She shares with us her favourite lunch recipe 1½ Veg, 1½ Protein, 1 Fruit, 1 Fat + 20 optional calories

 INGREDIENTS

  • 135g mixed greens
  • 1 tablespoon fresh thyme leaves
  • 120g pomegranate seeds & grapes, halved
  • Dressing:
  • 1/2 teaspoon olive oil
  • 1 teaspoon pomegranate syrup
  • 1 large lemon juice juiced
  • 1 clove garlic minced
  • 75g lowfat Halloumi cheese cubed

INSTRUCTIONS

  • Heat a griddle pan and dry fry the cubed halloumi for a couple of minutes.
  • Mix all the dressing ingredients together.
  • Toss all the ingredients with the dressing and top with the hot Halloumi cheese.
